And I'm increasingly using services that allow me to use Bitcoin whether a merchant likes it or not. It's just as unprivate and centralized as the fiat rails so I lose nothing there. Strike is one example. They probably respect privacy better regardless, but it doesn't matter.
That said, I still go out of my way to buy things with Lightning when I can.

Demand isn't the best word. What I really mean is that if they don't, I'll give money to competitors who do. This is all silent. I'm not literally doing this at a counter, since those people usually have no power anyway. The only time I really message and request this is for FOSS devs who have bullshit fiat payment and data collection. I let them know I didn't donate for those reasons.
I tell businesses I want better by sending market signals. Now maybe the signals are so small they don't care. Maybe they never figure it out. Not my problem. Businesses DO tend to notice things that will save them money (like no chargebacks, lower fees, etc). And some have adopted Lightning for those reasons. Exclusively? No. But the needle moved. Sitting on the sidelines and doing absolutely nothing is a great way to lose. I vote with my wallet.
