Fun fact is that meadowsweet contains salicylic acid. While the contemporary botanical name of its genus is Filipendula, it used to be called Spiraea, which gave its name to... Aspirin. Second fun fact is that you also find this organic compound in willow (genus Salix), which gave the name to salicylic acid.

If you want to learn more about this, check:
- "Rubus fruticosus" (genus and species of the blackberry). You could also go for "Rubus spp." as it's a bit of a messy genus with different species that are sometime much similar
- "Humulus lupulus" (Hops)
- "Leaf morphology" if you want to nerd the thousands way to talk about leaves (I'm not there yet).
- Well and of course, just go outside and observe, next time you come accross these plants. You can also prepare and eat them.

Veins:
These are the thin lines you see meandering on the leaf. They are transporting water and nutrients through the plant.
In both hops and blackberry leaves, you will see this pattern of a central axis with a bigger vein, from which secondary veins are groing both sides. It looks like a feather, and it's called pinnate veins (pinnation is an arrangement that occurs in other natural contexts).

Margins:
Both hops and blackberry leaves margins have these small irregularities, called serrations: like tooths of a saw.
Serrate leaves are also a characteristic shared by most plants from the rose family (Rosaceae), which Blackberry is from (not hops. By the way hops comes from hemp family (Canabecaeae), same as marijuana, that's why it smells the same, try to crush a leaf or the cone when it's season).

Shape:
A hop leaf is usually palamtely 3-lobed. It means that a single leaf contains three divisions in the shape of a palm (think of a duck palm or your hand), spreading from its base. You can see it easily on the picture: One leaf with three lobes.
Blackberry leaves are compound leaves: They often occur in a composition of three leaflets, but it is not a leaf with three parts. It means that these are three different singular leaves, that are displayed or arranged together by three.

Hops growing rampant on brambles, I really like these kinds of entanglements.
At first sight, one could mistake one plant for the other, as leaves show immediate similarities. But looked closer, here are some differences and shared characteristics you can easily spot:

Cool. Si jamais tu n'en pas pas encore, je te conseille vivement d'investir dans un gärtopf. C'est un fermenteur en céramique un peu à l'ancienne, qui maintient le contenu à l'abris du soleil et aide à garder une température + constante. J'ai 99% de succès avec tous mes krauts et kimchis. Tu peux vraiment les oublier sur ton plan de travail, revenir 15 jours plus tard et le résultat est délicieux

I can recommend the book Fermented Vegetables from K and C Shockey. I found it excellent to begin fermenting. Recipes organised around ingredients, so you understand how vegetables tend to behave when you lactoferment them

- the most important is to make sure the veggies don't get in touch with the air. So you want to put weight on top (ideally a plate that has the circonférence of the jar with stones or something clean and heavy on top).
- Let it sit for 10-15 days outside of sun, preferably in a slightly colder environment than ambient temperature. (Depends on where you are in the world).
- Taste after a week and when you are happy with the result, transfer to closed jar in fridge

Mini recipe:
- Cut all your vegetables in bite size or smaller
- Weigh the total amount of vegetables
- Add 2 percent of this number in salt
- Mix and massage vegetables and salt together on top of a bowl. You will see some juice/sweat coming out of the veggies.
- In a jar or fermentation crock, pack down this mixture
Use your fist to make sure no air pocket is left.

hello, coucou. I often call my recipe for 'Kimshi-ish' as I don't use gochugaru (chili paste mix) but just chili flakes. The result is a spicy Napa cabbage kraut.
Ingredients I use are: Napa cabbage, carrots, spring onion, daikon radish, fresh ginger, carrots and salt.
As you mentioned it is easy to make. Probably best if someone shows it to you once.

Now I just had a talk with a native danish speaking friend.
She mentioned the facial communication that is quite important here: You can say a simple "Hej", but you would pursue with nodding with your face with a slightly insisting smile.
Also saying "Hvordan går det?" or "Hvordan står det til?" with simple and short answers could be a fine way of greeting acquaintances.

I see (sounds lovely!). Maybe you could ask them what they think about it? My guess is that the different cultures produce different manners related to straightforwardness and use of cordial small talk.
My native language is French, so I have been also sometimes a bit blocked when not being able to say "please" or make things sound nicer out of respect or politeness.
When talking to my friends in Finland, the gap is even bigger, their language seems very much more direct.

Back home!
I decided to spark joy in my old kitchen counter concoctions. I had made this spruce tip syrup last summer. It is very delicious but it half crystallized and didn't give me energy when looking at it.
I blended the whole thing, then I froze for 30 seconds with my chalk marker in my hand: how to call this.
Looking g forward to use it as cooking ingredient or topping.

Reaching the end of my art residency in Massia (South #Estonia), I'm so happy to put together the very first *draft* of a fermentation 101 #book.

- Oh yeah, while boiling, i added some #birch bark (coming from a freshly dead tree) for #flavors and #tannins
- When the wort reached ambient temperature, I topped it some of the fresh #birchsap that would act like a wild yeast starter inşallah
- Now I just have to wait and see if all of this is worth the endeavour I guess

So this is happening: the #birch sap is taking a walk on the #wild side of life.
- I harvested around 12 L of birch sap
- Thinking about sugar content in 1 L of birch sap (1 percent, so 1ml in volume, around 8g/L) and how much sugar I need to produce 1 degree of alcohol (18g/l), I decided to reduce my yield by a bit more than two in order to reach that number
- I kept around 1L of fresh sap for drinking as it is, and put some on the side for pitching the #wine.

I guess they prevent certain kinds of microorganisms to proliferate (some lactic acid bacteria that would create off flavor?), while letting some others do their work. Otherwise we wouldn't use hops or other bitters to preserve beers, they would just kill all possibility for microbial life.

Aim was to add as little as possible of extra source of sugar to remain close enough to the original birch sap taste. I reduced the sap to reach enough sugar content to reach 1 percent ABV (around 18g/liter).
I boiled it all, adding birch bark for extra tannin flavour.
I will ferment half wild (with a bit of extra fresh unboiled sap), and will add yeast for the other half.

Obsessed with grooming, touching and kissing this cat because I'm a primate after all. I wished we expressed affection in the same way. I want to squeeze this cat so hard, but I need to catify myself a bit to show my love so it doesn't get scared.

Same question, in the context of food fermentation: I am looking for help naming things correctly, with the purpose of teaching:
I would like to make the difference between 'Wild fermentation' (when microorganisms occur naturally on the food) and... 'Cultured fermentation'? Or at least when you control which microorganism will inoculate your food, with a starter culture for example.
Any leads?
