Remember when I was considering making a 9.ish % Tripel because I haven't made an unapologetically strong beer in a while?
The mild hangover from just one glass of Quadrupel reminds me that I actually had a good reason for that 😖

The hop harvest is in. Two washing tubs of wild hops and half a washing tub of rather measly but very aromatic Hüll Melon cones. I had eight helpers and we were done in like 1h30. I should remember that next year, it was kind of nice to have more time for the pizza part of the evening 😋

Lod Pivovar was the final brewery we tried in Prague and it was certainly the most interesting. It is located on a ship anchored at the Vltava river and their Czech Lager also takes a New World spin. It combines the mango and tropical fruit notes of an IPA with the pintability of a Czech Lager. I am planning some sort of pale Lager with Hüll Melon in my head ever since. Super inspiring beer. Even if it was a bit grainy in the finish.

We ended that evening at Pivovarský dům Benedict, a craft brewery focussed on Czech Lagers. I think they were using some sort of New World hops because these lovely notes of pineapple and lychee certainly don't come from Saaz hops. There was a touch of grainyness in the finish. I guess the water in Prague is harder than that in Plzeň, but I will not hold this against them because this was a lovely Czech Lager with a beautiful New World spin.
My girlfriend was also very happy with her Sour.

By then my girlfriend was really hooked with Czech Lagers so we kind of started a little pub crawl. The next station was the historical brewery U Fleků. My girlfriend found her favorite beer in their pale Czech Lager with its interesting hop notes of stone fruit. This also shone through in my Tmave which made it taste like roasty chocolate with a peach note as it got warmer. Super delicious and definitely my favorite Tmave on this trip

No visit of Czechia is complete without checking out Prague. The first night I had this Hubertus Tmave with my dinner. It reminded me of my own Schwarzbier. If I had skipped the Munich Malt and handled the oxidation better, that is 😅
Anyway, crisp, lean, roasty, a lovely fit to the burgers we had. Tmaves are really underrated and I'm glad I tried them for a more complete experience.

(We also covered Budvar while in Tábor but I think that particular establishment had issues with the cleanliness of the taps, so that experience was below my expectations. However I will not hold this against Budvar because usually I love their stuff.)

After Plzeň, we went to Tábor for some history (Hussite Wars) and hiking. We came across this beer made by a small crafty Lager brewery called Obora. I'd say that this is my favorite beer of the trip. It's a typical Czech Lager, smooth, pintable and satisfying but Obora grow their own barley and hops and that shows in a beautiful lemon note in the finish. Absolutely lovely! Go find this stuff if you visit Czechia!

Oh right, what did it taste like...
Well, it's unfiltered, so there is more of a yeast note in there. And the beer is not lagered for such a long time, so the flavor is much more dynamic. Plus the wooden fermenters leave a tanniny mark in the beer. But it is like a Kellerbier (literally, considering that it was made in the old lagering cellars) version of Plzeňský Prazdroj. Something you don't come across every day.

Plzeňský Prazdroj makes one special beer that is only poured on the brewery tour and in their restaurant. They ferment it in open fermenters in their lagering cellars and lager it in wooden barrels. All made by their own coopers. Yes, this is touristy shit because an industrial plant is not that picturesque but this is exactly the kind of touristy shit I'm into 😍

Of course we had to take the brewery tour the next day. I usually visit small crafty breweries and seeing an industrial plant of that magnitude was certainly a different experience. What blew my mind is how the entire brewery is built around this beer. The guide told us that this ginormous brewhouse can only make Plzeňský Prazdroj because the triple decoction mashing schedule is hardcoded into the control systems of the kettles 🤯

When in Plzeň, you start with Plzeňský Prazdroj. Actually I wanted to try only this beer in Czechia and be done with it. But oh was this a satisfying drink! The rich mouthfeel from the triple decoction and the foam! The assertive but smooth Saaz hops! The soft water! The pintable 4.4% ABV! Even my girlfriend who usually avoids Pilsner was amazed. Getting this fresh from draft in the town where it was made was so much better than any of the crappy German local brewery copies I ever had!

We are back from Czechia! Turns out we like pale, hoppy Lagers after all. And I SWEAR it was a coincidence that our hotel room in Plzeň had this view on the Plzeňský Prazdroj brewery!

Okay I want some bone dry Saison for the next summer. I'll make it happen somehow. I'll find yeast that is not shipped all the way from Mexico. I'll either use WHC or Gozdawa. Or possibly even some liquid yeast. But there has to be Saison on these hot summer days!

We set up the hop rigs today. The wild hops look pretty good already. Which is great because if all goes well, around this time in 2026 I'll drink a nice pint of bone-dry, thirst-quenching, hop forward session farmhouse pale ale and enjoy this hop's marmalady orangeyness 😋
Yeah, I know, sometimes this hobby requires an insane amount of patience 😆

Bittering hops are in. This smells like a curry with lemongrass and coriander. Not quite what I would have expected but certainly something I did not have before 😅

I just mashed off and prepared the bittering hop charges for the boil. Last year my Cascade plant finally produced enough cones to make a full batch of beer with it, so I'm hopping this beer exclusively with 50g of this classic west coast hop. The original hops from Oregon are known for a noble bitterness and their piney and grapefruity flavors. I have no idea how the German terroir will change these flavors but I am excited to try it out.

Oh right, the mash temperature...
The closer you get to the 65°C, the drier your beer gets. I'll aim for 68°C to get some more body into the beer. That's a trick I got from Jen Talley's book on session beers and this is apparently generally recommended for lower gravity beers like the one I am making right now.

With some caramel malt (like my Caramunich 2) it is absolutely possible to make beers with continental European malts and a single step infusion mash. In fact that's how I started homebrewing. And to be honest it's quite nice to do a simple mash instead of that lengthy two-step mash dance. 😅

Four hours behind schedule... Oh well, the joys of homebrewing...
I have mashed in and I'll do a single-step infusion mash. Sounds fancy but this is really the simplest way to make wort: You throw your malt in the kettle and keep the temperature between 65 and 69°C for an hour. This is more common in anglo-saxon styles. I usually use a two-step infusion mash because that gives beers made with continental European malts more body and a better head retention.

Sorry for the delay... some genius cleaned the beer stone in the brewing kettle with one of these stainless steel cleaner metal sponges and now said genius needs to clean the kettle over and over until that metal smell and flavor in the brewing water goes away 😖

The grain bill is simple:
* 2700g (90%) Pilsner Malt
* 270g (9%) Caramunich 2
* 30g (1%) Carafa 2 Spezial
Many homebrewers get fancy here with Melanoidin or Victory Malt but I go for the classic approach "Pale base malt plus medium caramel malt plus a touch of color malt". I also use German malts because I do not think that shipping ingredients around half the world is a good idea when you can get local substitutes.

For all those who never had an Amber Ale: I think they are one of the best styles of beer for people who cannot decide if they want a malty or a hoppy beer. The best examples showcase hops and malt in a nice balance. I aim for some dark fruit malty sweetness and some piney-grapefruity Cascade hoppyness in a pintable 4.ish % ABV. format.

For me, this is a return back to the time before I started to use step mashes and temperature control. I have learned a lot about brewing in the meantime and I want to see if I can make a great Amber Ale by now instead of just a decent one.
Plus the Cascade plant gave me enough cones last year to make a full batch of beer with it and I am super excited to see how my German-grown Cascade compares to what I remember about the original stuff from Oregon.

I guess, most of us started with the classic homebrewer styles of American Pale, Amber or Brown Ale. They are not complicated beers and it is super easy to make an example of the style that is at least decent. It's been a while since I made an Amber Ale and I have since been more interested in making Belgian Ales. But I think every now and then people should return back to their roots to see what they have learned in the meantime.

Today I am making an American style Session Amber Ale. I think this is an underrated and underbrewed style. Plus when I had Madtree's Amber Ale in Cincinnati last year, I thought I should drink this stuff more often. And since this style is even harder to find in Germany than the US, I have to make it first.

We harvested the aroma varieties Hüll Melon, Cascade and Hallertauer Tradition (from left to right) today. We were surprisingly quick with that but I had lots of helpers. The funny part is that none of them is particularly into my beers... 😅
