DAY 127 (Missed it yesterday) Finished our tartlets. Not easy but I enjoyed it and I want to make some at home. I need a lot of practice and I will buy some equipment and try to make some spring flavored tartlets. And I’ll buy some chocolate molds too and practice making some chocolate as we have chocolate when we come back from work place experience. DAY 123 Started with a written test, went okay not more. Made a list of the things I had issues with so I can read up on it. Then there was the mousse cake feedback, I did better than expected. I had the best glaze of the class! I also know what I need to work on. Then we started with the tartlets. My buddy wasn’t in class and she’s my favorite to work with, it’s easy to get things done and it feels like she’s the only one working sometimes. #Baking #BakerySchool #BecomingABaker

DAY 118-119 Yesterday was the 1th day of the mousse tests & it didn’t go great. My brain stopped working, I had my period & took some pills for it, got stressed out, got a bowl in the face & started bleeding & miscalculated the gelatin in the pannacotta. Not my best, ugh. The laminated dough test is in smaller groups so half of the class was off today & I went to my next work place, no red flags. Prepping for laminating tomorrow. DAY 108-109 2nd night went smoother, knew what to do and we worked well and managed to be finished early (no early buses tho). 3rd night went even smoother but there was more to do with baking all the breads. No breaks during night shift, a bit odd but… It was interesting to see both side of things and doing everything, I have shaped the bread during the day and now I have baked them as well. DAY 100-103 Tired like always. I sort of do the same thing so there’s not a lot of variation but I do feel that people like me and trust me when they ask me to do something so that feels nice. But man am I tired all the time. My teacher was by on Monday and checked on me, things are going okay. DAY 97 Big day, super tired. Fell asleep on the bus home. But we did it, made 10K semlor and with time to spare. At times you fell out of sync with the line, you where made putting the lids on and had to wait for the person piping the cream and I hate standing there doing nothing. I’m always scared that people will think I’m lazy. I can live without semlor for awhile now, good thing they have a season 😆 #Baking #BecomingABaker #BakerySchool

DAY 95 My baguettes got the approval of the French guy which I take to heart. I still need to practice on piping the cream on semlor but I think I saw that we are making around 8000 of them the coming days I’m sure I’ll get plenty of practice. DAY 93-94 Yesterday was pretty much like Tuesday. But today I did all the heavy lifting. I was making all the dough and measuring all the indigence and it was heavy. Knock on wood, my back feels alright. There were all of these bags weighing 25 kg that I had to carry around and scooping out 88 kg of flour, and them scooping all the dough out in portions. DAY 90 Better than yesterday as one of the people I didn’t really like didn’t show up. Some chaos in the bakery as some equipment had broken down and the replacement didn’t work either. DAY 87-88 Week 1 of WE. Tired but it’s such a difference from my first place. People seem like they want you to learn and get better, and they give you a little responsibility and when they see you can do that, they give you some more. I’m going to be there for 6 weeks so I’ll ask if I can be there for the early shift and be part of baking all the bread, now I’m doing the buns and breads but they get baked in the morning so I don’t get to work the ovens. #Baking #BakerySchool #BecomingABaker

DAY 73-74 Yesterday was busy. We were making bits and pieces for our mousse cakes. Was in a group with Ms Know It All, she’s a good worker and I always work well with her. Today we made some more bits and had some theory as well. Maybe some chocolate crunch that was really tasty. DAY 70 Twenty five of work experience. I would eventually clash with this woman if I wasn’t there for a short time. Getting such bully vibes from her. I don’t want to work at a place this. Unsure what I have learned other than that. A little concerned that I’ve fallen behind in my education. DAY 64 Eighteenth of work experience. Mentor was there and only one available for the meeting. It went okay, still unsure how the grading will go but… It was nice to see my teacher and she reassured me that she believes in me and that felt good. DAY 51 Fourth day of work experience. Similar to yesterday. Did okay, but I am doing a lot of the dull stuff. Probably packed 60 or more cakes and I was crumbling up maybe 40-50 cakes that didn’t go as planned in the over, took me two hours, two out of eight minus one hour lunch so almost 30%. Hm, that leaves me 70% and I did two other things, packing stuff and filling some mazarines. I dare say 60% spent on packing… Ugh #Baking #bakerySchool #BecomingABaker

DAY 48 First day of work experience. It was hard work. Being new, feeling a little lost and lonely. My mentor was busy so a 21 year old was in charge, he was from the same school as me so it made it easier. Hoping that I get to try more varied things in the future. Made over 1300 of the same cookie today, wasn’t that much fun but a reality in the business I guess. DAY 47 last day a head of 5 weeks of work experience. We finished our mousse cakes, it was hard but fun. Someone accidentally cut themselves and went to hospital but I didn’t even notice, they didn’t want to make a fuss and didn’t even tell the teacher. DAY 46 Some drama on the horizon, it’s a perfect time to head off to work in a working bakery away from everyone. Someone poured liquid soap in a girls water bottle. We don’t know who but I have my suspicions, same girl that has started go around making false claims about me not cleaning properly. She’s so two faced and I’m too old for this. Yeah it sucks. Feels odd as she lives here, goes to school here. I thought she was Swedish due to her accent. She has a boyfriend here and everything. Maybe she can figure something out and come back to the country but she won't be finishing the education.

DAY 42 Part Two. In mine no one wanted to take charge and I was sort of forced to do it, I didn’t want to tell people want to do and boss them around and I didn’t even though I should as we were slow to get things done. I felt kind of old. Started our mousse cakes today, brownie and joconde bottoms, and we made some panna cotta and lemon curd as well, oh and chocolate caramel and a crispy thing. Sleep!

DAY 41 A bit confusion and miscommunication from the chaos sub so I had more on my plate and I needed. The end result suffered. DAY 37 Sub teacher drama today. I did not get the help and support I needed, got cranky and irritated and it showed in the result of things. Baked off our laminated stuff and made biskvi and budapest bottoms. The biskvi bottoms had too much egg in them and I had to remake them, and my budapest (a meringue) was in the oven for too long. DAY 35 Very short week and a pretty short day too. We watched our teacher work with some laminated dough and we banged some butter (I hope that’s the phrase also used to English, if not, let’s make it happen). Then we listen to some info about mousse and went home… back to school on Friday for more lamination. DAY 30 Grade day, I got a B in Bakery 1! I write great log books and tests, I’m a team player and I encourage people. My finished products and confidence can be better. She didn't say it but I feel like I can plan my work better.
Feels like I did fairly well, I heard what some others got and looks like I might be in the upper half. I need to remember this when I have a bad day.

DAY 29 Decent day, we finished our biskvis (tempering and working with chocolate is hard) and our Budapest cakes which was easier and more fun than dealing with the chocolate. Everyone still in class has passed the first part of the course, yay! Next week we will know more about our workplace experience coming up and of course we have another test. So many tests. And I need to find a better solution to my phone, the ziplock is making the pictures too blurry. #Baking #BakerySchool

DAY 26 Back to square one, princess cake! Somethings went better than the first time but a strange shape if you look at it from the side. So far when we have subs we don’t get a lot of feedback so I need to start asking for that more. Regular teacher tomorrow and I want the feedback but I don’t want to be an hour behind like we always are… tricky. The Kid went home early, I’m starting to worry about him. DAY 24 Baked so much, don’t even remember it all, and we got to taste everything! Started baking off a knot we did yesterday. I said it would be nice to dip them in browned butter and sugar so we did that, yum! Two kinds of plaits, a Danish rye, a loaf the sub had named after himself, something we call butter cake... Last day with this sub, we get a new one on Monday. No pants girl and the guy that crumble at the written exam, still missing. Hope they're back on Monday. #BakerySchool #Baking

DAY 19 Finished the test today. I did okay I think, I know some of the mistakes I made and I know what to do better. I was so worked up and stressed out that I’m glad I made it out alive.

DAY 14 Felt a little stressed &lost today, not that bad but a little. Feel like I’m treading water, want to feel more like swimming. It’s a pretty intense course with a steep learning curve. More cinnamon rolls today &it went better than last time but far from great. Didn’t have time to bake them today, which I knew what they looked like when they are done. DAY 8 It was a different vibe today, it was a good. We assembled our princess cakes. We don’t have enough equipment for everyone so I was standing around with nothing to do for long periods of time, tried to score some brownie points by washing up. I prefer being on a bench with some friends around, I like to be able to ask question and helping each other out. Not everyone is that chatty tho. I got 3rd place in best cake! Week 59 of my imaginary walk to Barcelona: I got some Ks down despite being back to school with homework and a storm. I'm in Donzére and it's pretty nice. 2242 km done and 404 left to do, knock on wood but we are getting closer and closer to Barcelona. Week 58 of my imaginary walk to Barcelona: Following the river and heading to Montélimar, 2222 km done and 424 left to go. Sounds easy but I start school tomorrow so unsure how much I can do... Week 48 of my imaginary walk to Barcelona: I've walked through Dijon and I'm in another field. At this pace I will reach Barcelona in the middle of October. Week 26 of my imaginary walk to Barcelona. I'm at the outskirts of Hamburg, done 1069 km and have 1577 left. Been some ice and slush slowing me down but it's melting and drying up so maybe it will get better? At this rate I will reach Barcelona in November, can't wait! Week 24 of my imaginary walk to Barcelona. I'm in Eutin Germany, they have a pretty nice castle. I've done 993 km and have 1653 to go. Snow and ice are slowing things down but slow and steady and all that. Gained a kilo over Christmas. Week 13 of my imaginary walk to Barcelona. 560 km done, 2086 left. But, I feel like I can see the edge of Sweden, 3 weeks and I’m over to Denmark!
My weight is all over the place, it can vary with a kilo from day to day but I think I am slowly losing some weight. Feel I have earn a bag of chips but maybe try to learn to make a small portion at home instead of getting a whole bag? I beat! I need to get a house so I can have a proper garden again. These days with climate change and some new varieties, I can have peaches in a garden. The once I've bought in the store have been tasteless
