My youngest son and I turned the ground rabbit (ground 2days ago) into rabbit basil sausage tonight.
7.4 lbs ground rabbit meat,
chopped leaves from 1 basil plant (1 cup?)
8 tsp salt,
4 tsp ground black pepper,
1lb tallow, shaved
3/4 lb water.
Mixed in kitchen aid, tried stuffing but had a tough time getting the casing to cooperate, so the rest was vac bagged loose. Picture was the sample to get the taste right.

we live in a hill, so gardening is a bit if a challenge. in the last few years, we built around 60 raised beds using tree trunk logs on end, and 5-6 year aged cow manure. we always mulch the soil to keep the moisture and nutrients from eroding into the air. this is a view looking down the hill, towards the carport we use as a barn for the cow and calf.

Financial question:
My home is estimated to be worth 630k, I owe 327k, 2.99% fixed 26 years left. If I borrow 177k of the equity at 8.5% over 15 years (leaving 20% equity in the home), and buy btc today, it seems like projections say I could sell the btc at some point in the future (1-5 years) and payoff both the primary and equity loan.
I know the mantra, stay humble and stack sats. And the inherent mantra, never sell btc. And I know I could get rekt if btc drops and doesn't recover in the next 5 years. But, I have the extra income to cover the equity payments now, and I've got the stomach toaggressive? (traded options for amseveral years).
Am I being too aggressive?

The economics of homesteading for our family (7people living ar home right now):
Jersey milk cow and beef calf cost $1000, eats $700/yr in feed, plus $450 in hay. Fence was $1000. First year cost $3150. Milk cow on average has produced 4 gallons milk per day, we sell half @ $7/gallon, $5100 income. Plus we keep half the milk, making yogurt, butter, sour cream, and cheese. And we get about 240# grassfed beef from the calf plus dog food and tallow.
Seeds for garden $100/yr. not selling any at the moment, consuming about 75%.
15 egg chickens were free, cost annually $4000 in feed, produce roughly 3000 eggs. We consume all of these.
Rabbits are fed with leftover cow hay and garden greens, produce roughly 70 kits, 2# meat each.
Milking the cow takes 2 hours per day
Caring for other livestock and gardens take 15 minutes/ day on average.
Butchering takes about 30 hours /year.
Total out of pocket cost to us: $2100.
We still buy some things at the grocery store that we can't grow or raise here, or produce during the winter.
