We go through salt-preserved lemon at a pretty steady pace. Mince and add to a grilled cheese sandwich along with smoked paprika. Use as a condiment with rice and lentils. Sprinkle on scrambled eggs with mozzarella. Use as a garnish for hearty soups. Add to vinaigrette salad dressing. Serve thinly sliced with cantaloupe and a small wedge of Stilton.

Veterinary clinics have had an extremely hard time retaining and recruiting staff since the emergence of COVID. Clients can be extremely rude and it's frequently a high stress environment u, and it's hard to thrive in a situation like that. We've seen multiple vet clinics close in the last five years. It's a bad situation.

I found out why my vet's office is so backed up lately. The woman who ran the front desk, and hence made the clinic run, got sick and tired of being profiled and pulled over by federal agents on her work commute. She's a white citizen, married to someone with a Latinx last name. So it seems that ICE/CBP are using automatic license plate readers to identify cars with owners with foreign sounding names, and stopping them over and over. She quit her job and now stays at home. #ICEOut

Tomorrow (Friday, 1/16) marks four weeks since all of the Epstein files were required to be released by law. To date the Department of Justice has released 0.6% of the known material.

Chronically understaffed and overworked air traffic controllers learned at the end of last week what to expect in their paychecks this Thursday: nothing. They are not getting paid for the past month due to the govt shutdown.
On Sunday many air traffic controllers called in sick resulting in 8,700 delayed flights. On Monday an addl 3,370 flights were delayed with 118 flights in or out of the US cancelled.
That's gonna leave a mark.

We attended the #NoKingsDay2 march in beautiful "war ravaged" Portland, home of the Amphifa Frogs. Handed out 200 free safety whistles in mere minutes. No photos bc left our phones home. So many great signs and costumes!

OTD 45 years ago, at 8:32 AM, Mt. St. Helens erupted, displacing a cubic mile of debris, killing 57 people, darkening skies, and raining ash on 11 states.
I was camping with my girlfriend about 150 miles away in the Three Sisters Wilderness and we heard the blast. We heard a second big boom as it echoed off Mt. Jefferson or Mt. Washington. All voting in the United States should be this easy. No lines, no voting machines not working, no running out of ballots, no voter intimidation, no voter suppression. Oregon was the first state in the union to move to vote-by-mail for all elections -- and it works very well.

Oregon state has had vote by mail for over two decades, and it works exceptionally well. Not only can I fill my ballot out at any hour of the day, with no line to stand in, but I also signed up for notifications so I get a text like this when my ballot it is sent, when it is received back, and when it is counted.
If you live in a state that doesn't have vote by mail, heavily lobby your state legislation to move to do it. It also prevents a lot of voter suppression!

According to the Oregon Public Health Division, 45 people died from COVID in my state in August 2024.
People are still dying from COVID.
