Insulin is only a problem if you are constantly taking in sugar, not if you only eat carbs/sugars in a small time window everyday. The cells become insulin resistant if blood sugar is high all day long (a completely unnatural situation), which leads to diabetes, but not if you intermittent fast.

I went through the high meat phase you're currently experimenting with, in fact I became a certified ketosis health coach. I feel just as good on this diet as I did back then. The key is knowing the truly important details, such as the intermittent fasting thing I just mentioned.

Certifications/degrees mean nothing. Anyone can evaluate the research as well as anyone else if they focus on learning how. If anything, MDs are less capable of coming to legitimate conclusions because of the bias of med school, which is chiefly aimed at making them into drug salesmen.
