But it seems likely to me that there are other use cases, ones that Bitcoin does not fit very well, that will be filled by other chains.
I think the "everything over 21m" meme means that everything, all goods and services, are denominated solely in BTC.

Yeah that's standard behavior AFAICT. There's no way to delete a string that is non-functional.
So if the connection fails or times out or whatever there is no way to access the wallet settings screen and set your payment targets.
