Can you give me some examples of apps that do this? Or maybe more details?
I tried with Mail, Finder, and Music and they all retained their original search strings when I switched between them...

I’ve been saying this for the past few years. Some of the older Macintoshes and early IBM PCs were among the last machines that were simple enough to be understood by one person top-to-bottom.
Consequently these are also the most fun to work on, play with, refurbish, and use.

My first access to the internet was through a Sympatico dial-up account (BC) I believe on a 28.8k modem which was quickly upgraded to 56k. It was a Windows 98 computer, and we used Netscape Navigator 4.

I also would appreciate flexible/word-blocking filters at the server/host level.
But maybe I just don’t understand how YouTube does it… Is there a reason you’d want to filter content to be invisible for others but have it be visible for you? Is that just a moderation thing, or is there some other reason you need to see incoming harmful/hateful content?
