That’s awesome and looks delicious! Here’s some unsolicited tips: get a thermometer and blanch the potatoes in tallow at 325f for 2.5 minutes, pull them out onto a tray lined with a baking rack or paper towels. Let them cool down to room temp. Bring your tallow back up to 375f and cook potatoes for 3.5-5 minutes or until golden brown and crispy.
