@npub1eav…g6f3 That sounds lovely. I have been snacking on some fermented carrots, they are delish! Very crunchy and tangy.
I made some great oi kimchi (cucumber kimchi) with the cucumber glut this summer. It’s a pity it doesn’t keep for longer. Fermented foods are another taste explosion. I need to do more of them.

The great bean crop of 2023 is over. The bed has been cleared to be sown with winter green manures next week. In the beds next door the buckwheat and mustard green manures sown in August are flowering and attracting pollinators. In the kitchen the fruit vinegars are in various stages of fermenting.

I’ve added some more pre-bokashi compost to a small bed. Covered with soil or compost it’ll break down completely and become a friable bokashi compost in about two weeks. I’ll sow broad beans or field beans in this bed later in October.

@npub1zt3…0v09 @npub1pur…z24k In the UK I’d leave them on the vine as long as I can before frost. In your climate I would harvest the ripe ones earlier and cure them in sunshine (if safe from frosts) for a couple of weeks before storing.
