Cilantro has such a unique flavor; I can't imagine some dishes without it (but thankfully the "soap" gene is switched off for me).
Years ago, part of a ceremony I was helping to facilitate involved sharing small cups of soup. The other facilitator made me promise to add no cilantro, but then it was me who almost lost it when I tasted my soup mid-ceremony and realized she'd added a ton of hell's own herb, dill.
