How important is it that the hood have shaping? The easiest way to do a hood is just one big rectangle sewn shut across the top. This makes the hood pointy which can look a bit odd, but kids generally look really cute in slightly odd stuff!

If you want the shaping, my advice would be to follow the pattern to the letter without worrying about HOW it's going to work. If the pattern writer knows what they are doing, and the pattern has been tested by others before publication, then it will work, and you will probably understand the HOW much better once you've actually done it.
