YUM. I approve of these innovations! That sounds like a very healthy, hearty curry, perfect for winter.
For the lamb chops* — there are Thai recipes but they are a bit involved! I prefer doing a dry marinade with sea salt, cumin seeds, chilli powder/flakes and sichuan pepper (just omit if you don't have it) whizzed in the spice grinder (aka $16 coffee grinder from K-Marché!). Marinade overnight in the fridge with no cover then drizzle with a bit of oil and grill until cooked to your liking. (Traditionally they are quite chewy.) The entire neighbourhood will know you're grilling — these are FRAGRANT. Also very moreish.
* this also works really well with lamb 'ribs'

Ooh ooh! Heavily roasted veg (pumpkin, carrot, red onion wedges, capsicum) with red curry paste and coconut milk makes a delicious curry. The pumpkin breaks down when you simmer them all together, giving it lots of body.

Ugh. I was holding off on googling post-herpetic itch because I knew it was not going to be good news but my curiosity got the better of me and YO, IT'S NOT GOOD NEWS. I can't use capsaicin because it's right over my eye. I've been following this One Weird Trick my psychiatrist gave me of using dex before bed but I am pretty sure that's why I couldn't sleep last night. Oh gosh, what a bugger shingles can be.
