I actually love paying people to do jobs I can’t do. Being able to support others to be able to use the skills they have feels good. BUT….i also have a toxic dose of DIY running through my veins. Frequently I have to talk myself off the ledge, reminding myself that supporting someone else to do a job 10 times more efficiently and with more skill than me is better, freeing my time up to do the things I am good at.
Occasionally though, the DIY makes sense. Occasionally I do have the tools, if not the skill, and though I may have to bumble through, it’s a bumbling worth doing.
I’m currently adding “food photographer” to my list of jobs. I don’t particularly care for this work. I much prefer telling stories through my photos. However, I’m saving a lot of money photographing my cookbook myself and I do like the fact that it makes it more personal.
Anyway, here’s to learning new skills, and for knowing when not to.

This is what seasonal eating looks like in South Carolina summer. I look forward to this charred okra and pea salad all year.
Ingredients
For the dressing
½ cup olive oil
1 teaspoon Dijon mustard
Juice of 2 lemons
2 teaspoons lemon zest
2 tablespoons chopped fresh herbs (parsley, thyme, oregano or a mix)
½ teaspoon salt
¼ teaspoon black pepper
For the salad
4 cups fresh or frozen field peas (or cowpeas/black-eyed peas)
1 pound okra, halved lengthwise
1 pint cherry tomatoes, halved
2 tablespoons oil (for charring)
Salt and pepper to taste
Instructions
Whisk together dressing ingredients in a bowl: olive oil, mustard, lemon juice and zest, herbs, salt, and pepper. Set aside.
In a saucepan, bring water to a boil. Add 2 tablespoons salt and the peas. Reduce heat and simmer for about 8 minutes, until tender-crisp. Drain and cool.
Heat a cast iron or heavy skillet over medium-high heat. Add coconut oil until it just smokes.
Place okra cut-side down in the pan in batches. Let it char undisturbed for about 2 minutes, flip, and cook another minute. Remove and repeat with remaining okra.
In the same pan, add tomatoes cut-side down and cook 2 minutes, flip for 1 more minute. Remove.
In a large bowl, toss the peas with the dressing. Gently fold in the okra and tomatoes. Taste and add more salt if needed.
Salt and pepper to taste. Garnish with extra fresh herbs and serve.

Just a block of feta in a cast iron pan, drizzle of olive oil, finely minced garlic, red pepper flakes. Put it in a hot oven or on a hot grill. Maybe 15-20 minutes until it’s browning. Take it out and dump a bunch of finely chopped fresh herbs on top (soft ones like basil and parsley). The eat on bread, or potatoes or chicken or stand over the pan burning your mouth just eating it with a spoon.

Quick snap from the Provst dungeon under the Old Exchange in Charleston. This space was primarily a cellar but during the period of the revolutionary war, while the British held Charleston, an estimated 6k people were held (not all at once) in medieval conditions in this space. Men, women, and children, shackled and kept on stale bread and sickly water. With rats in the straw which was their only bed and riddled by mosquitos that came in through the small barred windows. Countless people died here, but few records were kept. They were imprisoned for their treason to the crown.
Additionally, as there isn’t much natural stone in coastal Charleston, the majority of the city is built with bricks which were, of course, hand packed by enslaved people of the surrounding plantations. If you look closely in places like the dungeon, which have been protected from the erosion of rain, you can find thumbprints in a lot of the bricks.
All of this took place 200-300 years ago. All of this is recent history.
I’m currently homeschooling my sons (ages 13,12, & 10) and in teaching them history, I’m also teaching them to keep their eyes open to current events that will still be studied and talked about 300 years from now. Can you imagine what will be written and told about the time we’ve lived in, and the insanity people just accept as normal? I expect it will be just as hard to wrap our heads around as these things, which many people accepted as normal back then.

Good morning darlings. The garden is dwindling and I’m realizing how much I love August. For years, I lamented the end of summer but these recent years, it’s come like blessed relief. Tearing out the tomato plants and turning under the patch where the potatoes grew feels like permission to rest.
I love the season of the garden where the roots grow, where the evenings are chilly and there is so war to be waged on pests. I do miss the dahlias though, so now I’ll just appreciate every offering they make as if it might be their last. #grownostr #gardenstr

Recording a podcast after taking a little break.
This summer was a season to let the low end drag. Multiple injuries and illnesses in our household meant we met our limit at a lower capacity than usual. Prioritizing became necessary, and I had to choose what from my to-do list would be left undone.
Before I began picking things back up, I took the opportunity to assess everything in my life that I give my energy to. There’s nothing like a forced slowdown to show you just how fast you were moving in the first place.
The pace of this culture is inhuman. It is not cohesive with healthy humanity. That is why people keep laying their most basic needs on the altar of it.
They give up sleep, neglect the care of their bodies, set aside the needs of their relationships, and trade them for what?
This culture hands them money, earned in a rigged system that steadily robs the value from our days and hours.
I am making space for margin. Time to drink coffee slowly. Time to go for a walk after dinner and leave the laptop closed. Time to stop seeing every empty block on the calendar as a space where I should be working harder.
I am choosing margin. I am quitting the things that do not matter, so I can carry the things that do.

Sadly, we are coming to the end of the tomato onslaught. I consider any tomatoes I get in August and beyond a bonus, as the plants have blight and struggle with our summer heat. It’s always sweet while it lasts though.

Dr. Wyche’s Yellow tomato is one of my top recs for anyone wanting to grow heirlooms. Fruits are all over 1lb each, super meaty and delicious, and the plants are healthy and prolific. Sourdough discard pancakes on the blackstone during the power outage post Helene.
2 C. Flour
1 C discard
2 tsp baking power
1 tsp baking soda
3 T sugar
2 eggs
1 tsp salt
1 1/2- 1 3/4 C milk
Mix together and let sit for 5-10 minute before cookings. Will be a little lumpy.

I lost two lambs today. These two guys were in rough shape when I found them. Thankfully, with some intervention, I think they will pull through. I suspect selenium deficiency, and am moving my sheep over to the highly recommended Duraferm mineral and supplementing all the lambs born in the last week.
My heart is heavy today. Farm life is beautiful but not for the faint of heart.

Garlic confit has no business being so good with how easy it is. Spread on crusty bread, mashed into potatoes, topping a bowl of hash or eaten clove by clove, I love this stuff.
Whole peeled garlic cloves
Covered in olive oil
Added some fresh parsley, salt and pepper flakes.
325 degrees for 45 or so.
The cloves get all soft and mellow, and the oil becomes sweetish garlic-infused magic. #tastynostr #grownostr

One diced onion
A handful of thyme
Covered by a quart of honey
Cover with something breathable and leave it on the counter for two weeks. Don’t seal, it’s going to be gassy and need to breathe.

If you’re gardening in a hot climate, I cannot recommend this cucumber enough. Silver Slicer can be picked young for pickling or allowed to grow large as a salad slicer. White skin, prolific and doesn’t get even a tad tough or bitter with our 90+ daily highs in SC.
4 plants will give me enough to can a years worth of pickles and relish. 👏👏

A storm is blowing in to soak the blooming garden and water in all the things planted today. It’s funny how impatiently I await spring but somehow I always find myself taken aback by it. Either way, it’s fully here now. Next stop, canning season.

The aurora borealis shone brilliantly over South Carolina last night. Though I was wondering how northern lights could have gotten so terribly misplaced, I did enjoy that they came south for a visit.

Goats and cows in milk
Eggs are coming in strong
Three ewe lambs born this week
So. Many. Strawberries.
Chamomile harvesting
Artichokes setting
The last of the beets and rutabagas pulled
Onions are bulbing.
Hog processed, filling the freezer after winter.
Seeds are popping up, plants transplanted.

Sometimes I’m overwhelmed by the corruption and control I see in the world we live in. It’s overwhelming to be aware of but I’d rather have awareness than the blissful ignorance I observe so many enjoying.
I’d rather know and prepare, to build alternate sources of sustenance, to build something that isn’t so easily destroyed.
It gets a little hopeless when I observe through the phone in my hand.
But when I go outside and feel the spring clover tickling my feet, hear the cicadas loudly droning, smell the roses, welcome the newest life, I realize there’s a great steadiness. And then I keep building, planting and growing, and I think that it can make all the difference.

It’s strawberry season in SC. Anyone have any ways they love to use strawberries? In the next two weeks I’m planning on freeze drying a lot, and making strawberry jam and strawberry jalapeño jam. Of course, we will also eat lots fresh and make a good deal of ice cream. What else?
