I have an old homeserver with no GPU so haven’t done much with local models yet. I think in a year or 2 it will start to become effective to start running your own definitely. For now it’s not worth the cost of a GPU

Yeah I get the use case. I just think if you’re in a situation where you have to rely only on a local source the cost and risk of an electronic system is probably too high.
Investing in physical knowledge that is in a format/binding that will last years is likely a better investment.
I love the setup though, particular for sovereignty

Yup. Been cooking with stainless steel for 7 years now. Eggs and pancakes are a breeze. Only thing I haven’t been able to pull off is weirdly bacon. Too much catches before it crisps up, I just do it in the oven

Throwback to the start of the month when I went on an open fire cookery course for my 30th. Over 4 hours of driving in one day but had an absolute blast.
Couple who run the course run their own smokery on a 5 acre homestead in West Wales.
In total we made:
- Butter basted whole chicken
- Whisky barrel smoked ribs
- Reverse seared steak picanha
- Bacon onion rings
- Smash burgers
- Planked salmon
- Fire roasted vegetables
- Loaded bacon bits meatballs
- Flatbreads
All finished off with bone marrow melted over it
