yeah I had the same dilemma, I think you should just try it and see how it runs. If you dedicate the whole rbpi to just nextcloud it might be running ok, I wanted to run some other services as well.

definitely, that's where you can define anything about the drives and partitions on your system, from permissions to names, and everything else.
You see, I have no clue how Linux Mint settings manages drives, but I know how to use fstab and so I don't even care which distro I'm using anymore. Have a look here for fstab:

I'm sure that if I was to set up a workstation with access to many drives I'd use fstab to make sure everything worked as intended.

I'm afraid it's not a Linux Mint issue, it's just that like everything else there's a learning curve and it's easy (and normal) to fuck things up at the beginning. Do you manage the /etc/fstab file yourself?
