Oh, that actually simplifies the requirements a lot. Because you care about ΔU = U1+Uos − (U2+Uos) the Uos cancels. This means you can use any cheap FET input opamp like TL07x (if it is within your input/output voltage range). If not, use something more modern, like AD8603 RRIO opamp.
