If it helps I grew up in a bakery. It's a lot of waiting, but no chilling (retarding) for donuts. Rise in the bowl, cut into sheets, lets sheets rise, roll out, cut, proof (humidity/heat controlled proofing), fry, cool, ice, eat. Usually it takes about 3-4 hours from mixing to cooling.
