I make a pistachio butter vinaigrette, with dried tarragon and green peppercorn, a little honey and dijon mustard, sherry vinegar, and olive oil. It's very good, but last night we had it on a salad with a lot of Belgian endive and HOLY SHIT IT RULED SO MUCH, the sweet tangy richness perfectly balanced the bitter crispness, I really can't recommend this highly enough.
