I was going to reply with the same thing. I don't know any decent doctor that would diagnose an autoimmune disease solely based on TSH levels since there are multiple reasons why they could be off. I have Hashimoto's as well and an autoimmune disease means your body has antibodies that attack your organ/gland. So it isn't something that can just be cured of with food and you can test for the presence of these antibodies with a blood test (not just testing for TSH). So she probably didn't actually have an autoimmune disease like the doctor originally said. I'm in excellent health and fitness, but unfortunately, as is the case for anyone with actual autoimmune disease, food and exercise is not a cure.
