Yeah, the what is fun question is much more important.

Personally one of my favorite genres out there that seems to fit the general sort of criteria you're discussing is the "screw around while building/maintaining an old junker car" genre. I only know of maybe three or so games in that vein, but it's a lot of fun mostly with the screwing around part. You run around town doing odd jobs, buying parts, modding the car, upgrading garage or whatever, etc.

Perhaps something like that, but not a car? Old house maybe?

There's also the "The Long Drive" sort. I've seen two other games maybe in its vein and both are pretty bad. It's pretty much just drive forever down a procgen road, gathering fuel, swapping out parts (like putting a diesel engine in a tiny RR car, lol) etc.
