It's not, I believe, an inability to process sugar as such. it's that the amount of sugar we inumdate our bodies with is truly unnatural unless you are extremely physically active.

Aanother part of it is that natural sugars such as cane sugar, beet sugar and "table sugar" are something called Sucrose which is a di-mer, as opposed to Fructose and Gluclose that are mono-mers. The important thing to notice here is that the Sucrose dimer is joined molecules of Fructose and Glucose and the body can itself control the rate of which it splits the dimer apart into the constituent fruc & gluc.

Not so when we consume HFCS, which is chemically just a 1:1 mix of *separated* fruc & gluc, but it comes as a tidal wave into the body where the body cannot control the rate of absorption.
