1) the server is not proprietary, it is just a normal email server with #postfix + #dovecot configured optimized for chatting without rate-limits see https://chatmail.at
2) they didn't assign you forcefully a server, you choose to proceed with the default onboarding, there was a "use other server" button right in that screen with option to use other chatmail or your own classic email server
the default server will change to random in the future when multi-relay is ready
