This is called chlorosis. It can be caused my many things. However, based on the observation that the yellowing is starting at the center of the leaf and the veins are still dark. Along with the fact that this is new growth points to an iron deficiency in your soil.
Based on your previous posts and the high level of care you give I believe the soil could be depleted or water PH could be causing a nutrient lock up. You do tend to overwater a bit, but this coloration pattern doesn’t indicate overwatering unless it’s water leaching minerals from the soil.
Aim for a water ph as close to neutral as possible, 7. It doesn’t have to be perfect. 6.8 to 7.2 is fine in soil. Stay away from adjusting the ph with chemicals or additives like lemon juice. Total hardness plays a factor and the water will appear to have adjusted for a brief period and go right back to where it was. This is called buffering.
Reverse osmosis filtered water is best for this use.
You can use an iron supplement like kelp extract. Go easy with it. Too much can make things worse.
Some immediate help can come in the form of a foliar feed. Spray some highly diluted kelp juice or compost extract on the leaves once a week. Research this thoroughly. To strong of a mix will burn the leaves.
