It appeared to me that some rougher stuff falls onto the floor in piles to be sold as cow, pig, goat or horse feed (depending on coarseness). I didn't spot where the seeds went, but it's common for seeds to be sent to a specialty locust bean gum processor. This seems like a fairly fine product with good color, so I'm guessing this goes on to become carob powder.
