Carob harvest time starts in August and can go into December. Not only do the various cultivars get ripe at slightly different times, but once the harvest is in the warehouse, it can take a while to process. So this pile we're seeing in late March, large as it is, is just a fraction of what it can get to and you can see the marks on the walls from previous piles.

They have to control humidity in the warehouse so the sugars in the pods don't ferment.
