I've seen lots of stuffing fails. One of the worst was a stuffed fish. Stuffing was bread crumb, butter, raw shrimp & scallops, and egg.
The egg hadn't set. Which means it didn't get to sauna temperatures. Much less sterilizing...
It was on a buffet.
