Many homebrewers get fancy here with Melanoidin or Victory Malt but I go for the classic approach "Pale base malt plus medium caramel malt plus a touch of color malt". I also use German malts because I do not think that shipping ingredients around half the world is a good idea when you can get local substitutes.
