Since you mention the disks app, I think that will update fstab for you especially if it asked for superuser permissions. But usb drives are usually not listed in that file. Are these usb drives or builtin disks?

Diagnosing from afar… are the drives still mounted after changing labels? (Can you find them in the file manager?)
Resolve might just have to reconnect the media using the new drive name. It‘s like changing drive letters on Windows… it won’t find the footage.
