I've not run across any verifiable accounts of how St. Nick was a Moor, actually; what I do know is that he was Byzantine and he served in the Ecumenical Councils held by the Pope. Byzantines were typically Romans, after all, since Constantine moved the entire Roman Empire government out to Constantinople when the Praetorian Guard got too far into determining who was emperor....and the Pope wasn't having that move, hence the Great Schism.

Now, if verifiably ancient iconography of St. Nicholas has him painted black, then I'd say odds are that you're correct...so...next question...just how old is that iconography?
