Waiting for my pay to come through so I can buy some winter vegies to roast and then submerge and simmer in red curry paste and coconut milk. I used to make this quite often but I haven't in years and I was reminded of it yesterday. It is delicious on its own with white or brown rice but it also pairs well with grilled spiced lamb chops.
