For the record, there are "instant yeast" breeds (I think it is the right term when it's an actual thing like yeast? Or maybe not, lol.)

That said, mass producers have economy of scale. They can afford the lengthy process because it just keeps going and they're selling the stuff that's already done while new stuff is going. So I harbor doubts on that point.

Really the biggest things are, the wheat germ is more processed and losing somewhat along the way (including flouride — hence the water thing) and more bleached with a lot more sugar than it ought to have. All this likely feeds the wrong gut bacteria more than the right kind.

As a side note, it might be worth trying to make your own and see how your gut does. Using full grain and less sugar may help.
