I cook with a LOT of spices, but I think my core favorite is ground coriander seed. To paraphrase the Frank's ads, I put that shit in everything. Goes in curries, great with "American Chinese food"-style stir-fries, terrific in Mediterranean-style mixes with thyme, oregano, rosemary, and even some desserts.
