If I understand it all correctly: in essence, our bodies have a weight set point that they try to maintain. This is set by environmental factors, eg if mum had a low fat diet while she was pregnant, my developing body would have set me up to need more fat.

Every time we diet, our body goes into a panic thinking that we're experiencing a famine, so it sets the weight point higher to account for it. Meaning when we inevitably put the weight back on, we put on a bit more before we level out.
