Ah, I'm right that canned sardines come in two forms of liquid, water or oil, as far as I know. And I've always liked the oil ones noticeably more, but I'm no sardine connoisseur. They just seem to taste better spread directly on bread, for example. Likely the oil adds or holds some flavor and moistens the whole thing. I get a bit of bad olive oil, apparently, but not too worried about that
