1. I don't know if it's true

We really need a microbiologist in this thread (which I am very much not), but I think you can't get enough produced that way. What you could do is maybe make some sort of active yeast culture where you have engineered yeast that secrete a desired protein (or mixture of proteins) and periodically skim off the liquid and concentrate that down and use that to give your dough a protein boost.

If you really want to get into the weeds with this I can talk a little about it (though my experience is mostly theoretical): I'm not sure this would be a straightforward process. In order to produce a lot of protein you'd have to use engineered yeast and in order to get a really substantial increase in protein *strictly from the yeast producing it* your bread would maybe be majority yeast? It would be really funky anyway.
