In summary, I tend to think Apple is more concerned about your privacy than other BigTech companies are (the Siri debacle notwithstanding).
But they are a capitalist organization after all. They chose profits over privacy for China. And if their hand is forced, I'm expecting them to make that same choice for the UK...Sorry about your luck, dear consumer.

And here's the big one that should have frightened folks away from Apple: Apple used to give police users’ push notification data without a warrant. All they required were subpoenas, which are issued by police departments and law enforcement agencies with no judicial oversight.
If not for U.S. Senator Ron Wyden, the practice might still be happening. Thankfully, Apple now requires a court order or search warrant in the U.S. (both have to be approved by a judge).

Apple's voice-activated assistant, Siri, "inadvertently" recorded users' private conversations without consent over a decade-long period.
They were hit with a $95M Lawsuit, which they settled out of court. And surprise! Apple denies any wrongdoing.
