Pro recipe! Foam that stucks!🚀
.
300ml liquid (any taste)
3g Iota carrageenan
1.5g agar
50g egg white
150ml any plant based oil
salt
Mix agar, iota, liquid with a hand blender, cook it up once, blend in egg white and slowly pour the oil in a thin stream. Fill it in a isi whipper. Done.
The foam will stuck after 1-2 minutes.
We take as liquid a mushroom broth and the oil is almonds oil.
Just as example.

recipe:
300g vinegar any flavour
150g butter
2g Agar
2 leaves (4g) gelatine
salt
Cook vinegar, butter, agar, salt to a sirup consistency add the water soaked gelatine,
pour on a tray, chill, cut, reheat.

😂… so I have family, two kids. We eat healthy as possible. 90% vegetarian, 2or3 times meat per month, but not dogmatically. We have a garden too, try to harvest much as possible.
Maybe not fancy at all, also simple but always delicious (I can make gold from shit, chefs skills 😂).
It will be different in case I have no family, than I will eat shit 24/7😂

Plant based “caviar”.
Made from mushrooms, roasted vegetables and black garlic.

You can use any other liquid.
200ml liquid
1.7g Agar
4g Gelatin (or 2 leaves gelatin)
Mix everything, boil it once, fill in squeezing bottle, cool down a bit and squeeze the liquid in a box with 1 litres plant based oil (wich was 4h in a fridge).
Strain the Caviar through a sieve.
You can flavour it however you like.
Any oil, seasoning or whatever.
Or use it as a cocktail garnish.

The idea is to play with our memories of taste and smell the images that appear in our minds when we perceive those familiar flavors and scents of the past.
In this dish, we play with the memory of the sea. Flavor impressions of parsley, white wine, lemon, and onion evoke remarkably strong maritime notes, combined with the creamy, meaty texture of the mushroom gently cooked in almond oil.
For me, this is one of the best dishes I can remember ever creating. Also one of the sexiest.
