It would be fascinating to follow the evolutionary de-domestication process of agricultural plants and animals after the end of human husbandry. Many strains and breeds probably wouldn't just die out, but the selection pressure on them after humans left them alone in the wild would be immense. What will wheat, bell peppers, potatoes, sheep, cows, chickens look like after being left to their own devices in habitats all around the planet for 200,000 years? Sadly no scientists will be around.
