I tested to see if the intensely floral flavor of Trinidad Pimento Seasoning and Grenada seasoning came out it baking. It did and it was good. Kneeding the peppers with the flour/yeast for 10’ really infused the dough.
Top “bagel” was baked in a mold, no sweetened water bath. It came out like extra crusty bread. 😊
Bottom bagel was hand rolled and had the bath. I made them small bc I was worried overcooking might kill the flavor but it didn’t.
