Phew! got it running. The reason it took so long is that I brought it up under Portainer / Docker Compose and took a long time to work out that I didn't have DNS resolution in my containers. So it couldn't install sendmail and complete the install. Now to put some of my junk on and work out how to do federation requests.
This could actually be big...
