Ask your butcher (real butcher, not a grocery store meat cutter) for some beef kidney suet. Have him grind it for you. Take it home, render it down in a crock pot, then strain out the crunchies. You will have a beef fat you can use almost like butter, and dang near tastes better than butter if you add a little salt.
