Even to this day, despite the considerable materials-science improvements since then, I just don’t see ceramics replacing carbon/stainless steel in most professional settings. They chip even more easily than those superhard Japanese ones, and they never get quite *that* sharp. That said, I’ve been very pleased with my cheap one in the home kitchen setting.
