I’ve been looking to do the same but I’ve been told against running nextcloud on a pi, it’s just too demanding for the hardware. But if I was to do it, I’d go with headless debian/ubuntu on the pi and then the official docker container of nextcloud: https://github.com/nextcloud/all-in-one
