Have you checked your wallet to see if the zaps are coming out despite Amethyst's UI not showing it? Sometimes I would have that issue, but the zaps were actually going through, just not displaying as completed until I closed and re-opened Amethyst.
Aside from that, you can remove your NWC connection from Amethyst and re-add it, so long as you still have the connection string saved somewhere.
