Putting this out here for future reference. Megan Lynch (she/her) (npub1fn5…2e3g) 's thread about Carob -- and discussion of other trees that are also legumes, like Redbud, Cercis canadensis -- sent me down a fun #botany rabbit hole about another tree in that category, Black Locust, Robinia pseudoacacia. I've always loved to eat its flowers raw off the tree, but could the pods also be edible? Maybe.
But here is a lovely recipe (in French) for Beignets de fleurs d'acacia. Next year I'm trying this.
