The fact that we're unable to predict something does not make it unpredictable in an absolute sense.
It just means that the prediction is beyond our current abilities.
Besides, since Laplace's demon would posses complete knowledge of all future states, it would not need to predict anything. It would simply already know the future with absolute certainty.
It's all a bit too theoretical for my taste, but I agree that flies are very hard to predict:)
