So, why #arugula? I don’t know why I crave this, but it’s high in nitrates, which “can boost athletic performance and protect against heart disease.”
I don’t eat meat, so no worries about nitrates forming nitrosamine—a bad carcinogen—in the gut.
Anyway, gardening in the spring is a hard physical work, and perhaps my body is telling me to keep feeding good greens, so I can keep going. 🌱✨
