My whole egg mayo recipe (I usually triple it to make a big jar).
In a jug add:
1 egg
1 Table spoon lemon nice
1 teaspoon dijon mustard
1 teaspoon salt
Whiz with your stick blender while slowly pouring the MCT oil in. As the oil is added, it will thicken & start to pool on top, stop pouring & mix the oil in fully.
